The most expensive coffee in the world: It ferments in the stomach of a civet cat

The most expensive coffee in the world is obtained from the coffee bean, which is known as “Kopi Luwak” or “Luwak coffee” in the famous island of Bali, Indonesia, and which undergoes fermentation in the stomach of a civet cat.

The coffee obtained from the bean, which is not digested and fermented in the stomach of the civet cat, also called Luwak or Musang (Paradoxurus) in Indonesia, contains less caffeine than traditional coffee varieties.

For the production of luwak coffee, civet cats are usually fed arabica or robusta coffee tree fruit.

The coffee beans, which are fermented in the cat’s stomach, are cleaned after defecation and go through processes such as washing, drying, peeling of the outer shell and roasting.

Luwak coffee costs up to a thousand dollars per kilo, depending on its production processes and quality.

Ni Ketut Budiani, who works at a local coffee farm in Bali’s Ubud region, stated that this extraordinary coffee is prepared by going through a long process.

Stating that the coffee processing process usually takes a week, Budiani explained that the secret of obtaining a good coffee depends on whether the weather is rainy or not.

Stating that the aroma of the coffee will be better in the open sky, Budiani said, “If the weather does not allow and then we dry it inside, then the taste of the coffee will be different.”

Noting that Luwak is a “special coffee”, Budiani said that this unusual animal eats the coffee fruit collected from the trees at night and waits in its stomach until the morning.

Budiani also described the process by which coffee beans are separated from the feces of the Civet cat.

Stating that the coffee beans are washed with hot water after they come out of the animal’s stomach, then they are boiled for a while, Budiani said that the boiled coffee beans are preferably left to dry in the sun and then the shell is peeled off.

Budiani stated that the bean, which was cleaned with hot water again, was roasted and pounded in a mortar and packed. Explaining that the way the Luwak coffee is roasted also changes according to the wishes of the customers, Budiani explained that the grinding process takes about 1 hour for at least 2 kilograms of coffee beans.

Budiani stated that many foreign visitors show great interest in tasting the coffee, which costs about 3.5 dollars per cup.

Stating that ground coffee is packaged after sifting, Budiani said, “Many foreign visitors show great interest in coffee. Those who try coffee for the first time really like it.”
